This easy cashew shortbread cookie is so simple to make and bake, with butter, cashews, sugar, and flour.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 cup cashews
- 2 sticks (8 oz) unsalted butter (left to rest out for about 10 minutes- you want it slightly softer, but not room temp.)
- 1/3 cup sugar
- 2 teaspoon vanilla extract
- pinch of salt
- powdered sugar (optional, but let’s be serious…DO IT.)
