Cashew Shortbread Cookies

This easy cashew shortbread cookie is so simple to make and bake, with butter, cashews, sugar, and flour.


  • 2 1/4 cups all-purpose flour
  • 1/2 cup cashews
  • 2 sticks (8 oz) unsalted butter (left to rest out for about 10 minutes- you want it slightly softer, but not room temp.)
  • 1/3 cup sugar
  • 2 teaspoon vanilla extract
  • pinch of salt
  • powdered sugar (optional, but let’s be serious…DO IT.)
