Baked Eggs in Portobello Mushroom Caps – a bit tougher to do in practice. When buying portabellas, make sure to pick ones that will sit flat on the pan and have high edges. Tasty though.

Ingredients:

  • farm fresh eggs
  • portobello mushroom caps
  • slices of prosciutto
  • black pepper
  • fresh parsley or thyme
  • a little olive oil
